Tart Cupcakes

My love of cupcakes will never end. They are little cups of joy. Best of all there is so many things that can be done to them.
The other day I was sitting around thinking “Hmmm I would like a tart. No, a cupcake. Wait I want both.” That’s when I decided that the perfect summer treat would be a tart cupcake.
What you will need:
1 cup butter, softened
2 cups white sugar
1 teaspoon vanilla extract
3 1/4 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
1 cup milk
8 egg whites
1 lemon
1 cup of lemon juice
1 glass of wine
Start by heating the oven to 350 degrees.
Next cream together the butter, sugar, and vanilla until it is light and fluffy. Take a sip of wine.

After that combine in a separate bowl the flour, baking powder, and salt.

Now this part is key. Add the four mix to the butter mix by alternating between adding the flour mix and the milk. So, 1/3 flour mix, 1/2 cup milk, 1/3 flour mix, the rest of the mix, and finally the rest of the flour mix.  Now drink some more wine. I know I need some.

Next is the egg whites. Beat these until they are stiff. The trick to this is making sure that they are at room temperature otherwise you will be here all day and need a bottle of wine instead of a glass.

Finally add in the lemons. I like it real lemony so I add in the zest of a large lemon, squeeze in the juice for the lemon, and then add in roughly a cup of lemon concentrate. Stir.

Bake in oven for 25 degrees.

The icing is a delicious cream cheese frosting. It you love cream cheese this is the perfect frosting.

What you will need:
16 ounces of cream cheese
1/2 cup butter
2 cups of confectioner’s sugar
1 teaspoon of vanilla
Mix this all together. Sit back and drink some more wine.
When everything is done frost the cupcakes and cup up some fruit and add it to the top of the cupcakes. I find that berries are a favorite of mine to add.
